This Cajun Roasted Chicken recipe delivers bold flavor, juicy chicken, veggies and a rich white wine pan sauce. After testing multiple pans and roasting about 10 chickens over the last couple of months, my husband literally begged me to stop making chicken LOL, until he tried this one, approved it, and agreed that this version is absolutely the best! I’ve finally perfected the ultimate Cajun Roasted Chicken recipe. I started with classic salt and pepper and even experimented with steak seasoning, but I completely fell in love with bold, vibrant Cajun spices. While you can easily swap in your favorite seasonings, you absolutely need to give this Cajun Roasted Chicken recipe a try to see just how deeply satisfying roasting a whole chicken can be. It is the perfect, stress-free centerpiece for a Sunday family dinner, a lively gathering, or just an easy batch of meal prep for the upcoming week.

Preheat oven to 425°F (220 °C).
Put all the carrots, potatoes, and sliced onion in a 16-inch roasting pan. I think it’s a great investment, you can use it to make turkey for Thanksgiving or a cheesecake. It’s totally worth it.

Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers, and pat the outside dry.

Season the inside of the chicken with a generous amount of spices, such as Cajun seasoning (or any of your favorite seasonings, or just salt and pepper).

Stuff the cavity with a bunch of thyme, a quartered lemon, and a halved head of garlic.

Brush the outside of the chicken with olive oil.

Sprinkle with seasoning.

Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.

Roast the chicken and vegetables for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh.

Remove the chicken and let it rest.


Quickly scrape all the brown bits from the bottom and sides of the pan.

Slice the chicken onto a platter and serve it with the vegetables and pan sauce. Enjoy!
