Cauliflower Fried Rice

My take on healthy food is it’s great but we should not have to sacrifice taste. This Cauliflower Fried Rice is doing just that. The texture of little grain of cauliflower does a wonderful job and it’s low carbs/low calories. Coming from Bangkok Thailand, I’ve eaten so much rice in my life time and I love it so much, especially the Jasmin rice, that I didn’t think anything could replace it. However, I’m always open to trying anything new and was really curious what cauliflower can do. I also wanted to see if I can trick my husband, by not telling him that it’s not rice. Turns out, he liked it and he didn’t know that it was cauliflower! He thought it was Quinoa. Well, he also eats a lot of rice, guess where he gets that influence from… Me! ha ha ha So, I guess the trick kind of worked. ha!

Back to Cauliflower Fried Rice. It’s so simple and delish, so if you really want to eat healthy stuff, this is a great alternative. Personally, I think the texture of cauliflower rice is like small broken grains of rice. Coming from someone who loves rice, for the texture, I give it an 8 and for the taste, I give it a 10 just because I used all the seasoning and other ingredients just like when I make fried rice. I’m excited to show you how I made it.

Before we start, let me tell you about the seasoning. I love using Golden Mountain Seasoning Sauce and here is what it looks like. You can use light soy sauce if you can’t find it. To the left, it’s just regular sugar and to the right is just some black pepper. You can use white pepper if you have it.

Cauliflower Fried Rice

Let’s cook some food!

First of all, wash and cut cauliflower into florets. Add then in batches to a food processor.

Pulse to the size of rice.

Heat up vegetable or Canola oil in a medium pan, medium heat.

Add minced garlic. Stir for 2-3 minutes until cooked.

Add thinly sliced chicken.

Cook until no longer pink.

Add the cauliflower rice, stir and let it cook for 2-3 minutes.

Add frozen peas and carrots, stir gently until combined.

Season with Golden Mountain Seasoning Sauce (or light soy sauce).

Add some sugar.

And pepper.

Push the cauliflower rice to the sides of the pan, make a hole in the middle. Crack the eggs into the hole.

Break the eggs and stir until it looks like scramble eggs.

Then, stir to mix everything together.

Add chopped green onion, mix everything together. Turn off the heat.

Serve with a lime wedge and garnish with some cilantro (optional).

Ingredients
  • 1 head cauliflower, cut into florets (about 1 pound)
  • 1 large chicken breast, thinly sliced
  • 3 garlic cloves, minced
  • ½ cup frozen peas and carrots
  • 3 green onions, chopped
  • 2 eggs
  • 2 tablespoons vegetable or Canola oil
  • 3 tablespoons Golden Mountain Seasoning Sauce (or light soy sauce)
  • 2 teaspoons sugar
  • pepper
  • 1 lime, cut into wedges
  • cilantro to garnish (optional)
Instructions
  1. Wash and cut cauliflower into florets. Add then in batches to a food processor and pulse to the size of rice.
  2. Heat up vegetable or Canola oil in a medium pan, medium heat.
  3. Add minced garlic. Stir for 2-3 minutes until cooked.
  4. Add thinly sliced chicken, cook until no longer pink.
  5. Add the cauliflower rice, stir and let it cook for 2-3 minutes.
  6. Add frozen peas and carrots, stir gently until combined.
  7. Season with Golden Mountain Seasoning Sauce (or light soy sauce), sugar and pepper.
  8. Push the cauliflower rice to the sides of the pan, make a hole in the middle. Crack the eggs into the hole. Break the eggs and stir until it looks like scramble eggs. Stir to mix everything together.
