Berry Ricotta Toast

Berries Ricotta Toast can be breakfast, a snack or even dessert. It is super easy as you can whip it up in under 10 minutes or the dorky side of me would say “berry berry” easily. The ricotta is creamy and sweeten with some vanilla extract and sugar, but it’s not overly sweet. Most sweetness comes from fresh berries, then you drizzle the top with some good honey and imagine all of the above on toasty raisin nut bread.  Mmmm….. it’s delightful. If you are a berry lover, you definitely should give it a try and if you feel adventurous, try with other fruit. I think mango or peach would be yummy, too.

I adapted it from Giada De Laurentis’s Italian Fruit Toast recipe. I’m obsessed with raisin nut bread and I have a few recipes that you can use it for, Prosciutto and Fig Jam Panini  or Turkey Cream Cheese Tea Sandwiches or just spread Lemon Curd  on top. Her recipe uses ciabatta bread but I think raisin nut has more flavor so why not?

Let me show you how I made it. Let’s cook some food!

Set your oven to broil on high.

Line the raisin nut bread slices on a baking sheet. Brush both sides with olive oil.

Then sprinkle both sides evenly with some sugar, gently rubbing it in. I don’t like it to be too sweet so I only use about a tablespoon for 4 slices. Also, at the end, we will drizzle with honey, so we don’t need a lot of sugar here.

Then, put the baking sheet in the oven, toast under the broiler for about 2 minutes. Flip the bread and toast the other side for another 2 minutes or until golden brown. If you don’t want to use the oven, you can also cook the bread in a skillet.

Remove the baking sheet from the oven and let the bread cool.

In a medium bowl, mix together the ricotta, vanilla and 1 tablespoon of sugar with a rubber spatula.

Divide the mixture and spread it evenly on each piece of toast.

Top with berries, drizzle with honey and sprinkle with a little sea salt.

Ingredients
  • 4 slices raisin nut bread (or ciabatta bread)
  • 2 tablespoons sugar
  • 1 cup ricotta cheese
  • 1½ cup mixed fresh berries
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon extra virgin olive oil
  • honey
  • sea salt
Instructions

Notes
You can also cook the bread in a skillet instead of in the oven.
