BACON WRAPPED DATES STUFFED WITH GOAT CHEESE

February 5, 2017 By Mink Leave a Comment

Bacon Wrapped Dates Stuffed with Goat Cheese

We brought these Bacon Wrapped Dates Stuffed with Goat Cheese  to our friend’s house for the Super Bowl party. Our team, Seattle Seahawks, didn’t make it this year but hey, any excuse to eat and hang out, we’re always up for it. May the best team win!

Speaking of the winner, this easy, addictive 3-ingredient appetizer is surely a winner for the food category in my opinion. You can’t go wrong with cheese and bacon. The sweetness from dates, saltiness from bacon and the creaminess from the goat cheese are such good combination kind of like Sundays, Football and Food, if you know what I mean. ha ha ha.

I got some large dates from my sister and I have been dying to try them. They are pretty good size and so perfect for this recipe. Speaking of my sister, May, her family currently lives in Dubai and the last time we saw each other was last July. Here’s to you Sis, if you’re reading this, your dates are a-m-a-z-i-n-g. Miss you guys!

Preheat the oven to 350 degrees Fahrenheit.

Stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.

Cut the bacon slices in half. Wrap each date with a slice of bacon.

Now, you can secure each of these Bacon Wrapped Dates Stuffed with Goat Cheese with toothpicks or you can use wooden skewers.

I like to use wooden skewers because it makes it so much easier to flip them while baking. Well, do the math, I have 4 skewers of 22 dates. I’ll only need to flip 4 of them. If I use toothpicks, then I need to flip them 22 times.

This is totally up to your preference. The good thing of using toothpicks is, you can serve them with toothpicks on and people can just grab them by the toothpick at the party.

Arrange them on a baking sheet.

Bake them and flip them every 10 minutes.  I use thick cut bacon so it took longer, if you use thin cut, they should be done in 20 minutes. You pretty much bake them until browned to your liking. Mine took 40 minutes.

Once they are done, remove them from the oven and lay them on paper towels.

Once they’re cool down, remove them from the skewers and serve.
