Pear Blackberry Gorgonzola Bites

This Pear Blackberry Gorgonzola Bites are a burst of flavor in one little bite. This is the first time I’ve made them and I didn’t know what to think at first, but once you put the whole thing in your mouth and start chewing. Then once you get to the Gorgonzola, everything comes together. Tangy/sweet balsamic reduction, sweet pear, blackberry and the salty Gorgonzola.

This recipe is a keeper and I really want to share with you. It’s so easy, just takes 10 minutes or so to make the balsamic reduction. The rest is just stacking everything together. Next time we have a party at our house, we will be serving these! 

I don’t know if I can say “Let’s cook some food!” because all you have to do is…. pretty much just assemble.

So, I guess, Let’s assemble some food! 🙂

First, make the balsamic reduction. I used about half cup. Cook it in a small sauce pan until it is reduced by 1/4. I used medium low heat and it took me about 10 minutes. Don’t walk away from it, keep shaking the sauce pan from time to time so it won’t burn.

Then, let it cool while you are cutting half a pear into thin bite sizes.  Basically, small enough to go on your cracker. I’m using thin pepper crackers.

Once the balsamic reduction cools down, spoon a small dollop on top of each cracker.

Place a piece of pear on top.

Follow by a chunk of Gorgonzola cheese.

Then, finish with a blackberry.

Appetizer is ready! How easy is that? I hope you give it a try. You can use thicker crackers. The ones I used were thin so we ate them right away. Otherwise, I could see them turn a little soggy.

Ingredients
  • ½ pear
  • ½ cup of balsamic vinegar
  • 8 blackberries
  • 8 crackers
  • 2 oz. Gorgonzola cheese
Instructions

      หา Balsamic vinegar ได้ป้ะอ้อ เอามาต้มจนมันเหนียวอ่ะจ้ะ ครึ่งถ้วย ใช้ไฟอ่อนถึงกลาง ประมาณสิบนาที แต่ต้องยืนเฝ้ากะคนๆหรือไม่ก็ขยับหม้อไปมานะ เดี๋ยวใหม้
      (Can you find Balsamic vinegar in Thailand? Cook it until it becomes syrupy, medium-low heat, about 10 mins. Watch it, stir and shake the pot so it won’t burn.)
