CHOCOLATE ALMOND CROISSANTS

March 12, 2016 By Mink Leave a Comment

Croissant

These Chocolate Almond Croissants are buttery, chocolaty and so easy to make. My shortcut is the frozen puff pastry. I also sprinkle the top with some raw sugar to add extra crunch and sweetness. Puff pastry reminds me of Paris, the land of fashion, amazing food, wine and most of all, awesome pastries. We went to Paris and Versailles last fall and I swear, we had French pastries 3-4 times day. I really hope we get to go back some day but for now, let’s enjoy these Chocolate Almond Croissants.

Here’s how I make them.

Pre-heat oven to 400 degree F. Place 1 sheet of thawed puff pastry on the floured work surface. Roll it into about 8 x 8 inch sheet.

Croissant1

Use a knife or a pizza cutter to cut it up into 4 equal squares.

Croissant2

Then, cut from each corner into 8 triangles.

Croissant3

For the filling, I use a really good Belgium chocolate bar that I found from my local grocery store. You can use dark chocolate, white chocolate or any version of chocolate you prefer. Chop them into small chunks.

MilkChocolate

Place chocolate and sliced almonds on the puff pastry.

Croissant4

Brush the edge with the egg wash.

Croissant5

Start folding the dough over the chocolate as you tightly roll up the dough, enclosing the chocolate.

Croissant6

Keep going.

Croissant7

There you are.

Croissant8

Repeat with the remaining puff pastry and chocolate. Place the croissants on a baking sheet lined with Silpat or parchment paper. I think I say this several times, whoever invented the Silpat is a genius. Nothing sticks to it and it makes cleaning a piece of cake, or should I say “a piece of croissant”. 🙂

Brush the top with the egg wash.

Croissant9

Sprinkle with some raw sugar for sweet crunchy top.

Croissant10

Bake until they are golden brown on the top, about 12-15 minutes.

Croissant11

Voila! Chocolate Almond Croissants. I hope you give it a try, the recipe is below. Bon Appetit!

I also have a few other French recipes. Hope you check them out as well. 🙂
