
Inspired by the best homemade cookies at Cedar House Inn Bed & Breakfast in St. Augustine, Florida. During our stay there, we discovered cookies that was nothing short of heavenly. Each bite was a perfect balance of textures and flavors; crunchy walnuts, hearty oats, and delicate coconut flakes mingling with rich semi-sweet chocolate chips. These weren’t just a treat; they felt like a warm, homemade hug after a day of exploring historic streets. The best part? The wonderful hosts at Cedar House Inn were kind enough to share their cookie recipe with us, and now we’re passing along because sharing is caring. The only two minor things I modified were a little less granulated sugar and making the recipe for 2 dozen instead of 5 dozen. 🙂

Let’s cook some food! I mean let’s bake some cookies!
Sift together flour, baking powder, baking soda and salt.

Add butter, brown sugar, sugar in a stand mixer with a paddle attachment. Mix together until creamy.

Mix in an egg, vanilla extract.
Add dry ingredients to the creamed mixture and mix well.

Add oats, walnuts, chocolate chips and coconut flakes.

Mix by hand with a spatula to prevent heating chocolate.

It is best if refrigerated for at least 1 hour before baking.
Preheat the oven to 350°F.
Use a tablespoon to scoop and form round cookies on cookie sheets. You can line your cookie sheets with parchment papers or Silpat. Press the dough gently.

Bake 9-12 minutes until the edges are slightly brown.

Allow to cool on baking sheet completely. Enjoy!
