Italian Sausage Potato Hash

This Italian Sausage Potato Hash is a real treat for a Sunday morning. It is yummy, with just a few ingredients. This hearty dish will give you energy and get you ready to start your day. It is the breakfast of champions!  The ‘not so secret’ trick is to use a regular pan or cast iron skillet, I wouldn’t use a non-stick pan. My mission today is to get a nice brown crust on the potatoes and sausages, a regular pan or a cast iron skillet will help me achieve this goal. It makes all the difference in the world. Let’s cook some food!

Scrub potatoes real good and boil them in salted water for 20-25 minutes, until folk tender. You can peel them, I didn’t because I’m too lazy today. It’s Sunday, and who wants to work hard on a lazy Sunday? Once cooked, dice them and set aside.

Heat up vegetable oil (or canola oil) in a regular pan or cast iron skillet, medium heat. Remove Italian sausages from casing and break into small pieces. Add them into the hot pan.

Cook them until golden brown. Remove from the pan and move onto a plate.

Add potatoes into the pan, cook until golden brown.

Add sausages back into the pan and cook for a minute. Add chopped garlic. Season with salt, pepper, smoked paprika. Mix them together and cook for 30 seconds.

Add chopped green onions. Mix everything together. Lower the heat to medium/low.

Crack in the eggs. Oops… I broke one but that’s o.k. It will still taste good.

Cover with a lid until the whites are set and cooked.

Serve up the hash with eggs on top of each portion.

Ingredients
  • 3 baby Yukon gold potatoes (or 1 Russet potato)
  • 2 links of sweet (or spicy) Italian sausage
  • 2 green onions, chopped
  • 3 cloves garlic, minced
  • 4 eggs
  • 1 teaspoon smoked paprika
  • 1 tablespoon Canola or vegetable oil
  • salt, pepper to taste and a handful for boiling potatoes
