Ham and Cheese Crepes

Among all the hundred things we love about Paris, French food is on my top list. Ham and Cheese Crepe was one of our favorite things to eat when we went there last year. It is like American grilled cheese with ham but in a thin savory pancake batter. I am recreating it at home today using honey ham and fresh grated Gruyere cheese. I got a new crepe pan from the local world supply store yesterday and was so excited to use it today. My husband was excited as well, not about the pan but the crepes. I don’t think he’s had crepe before until we went to Paris. I got him hooked.

Let’s cook some food!

In a large mixing bowl, whisk together the flour and the eggs.

Gradually add in the milk and water (I mixed them in a measuring cup), stirring to combine.

Add the salt.

Follow by melted butter; beat until smooth. The batter will be runny, like thin pancake batter.

Heat a crepe pan or non-stick frying pan over medium heat. I did not use any oil because the batter has enough butter in it so it shouldn’t stick. I love my new crepe pan and I think I’ll make Nutella and Banana Crepes later.

Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe.

Tilt the pan with a circular motion so that the batter coats the surface evenly. Don’t worry about it being perfectly round, it will still taste good either way. 🙂

Cook the crepe for about 2 minutes, until the bottom is lightly brown. Loosen with a spatula, turn and add grated Gruyere cheese on top.

Follow by a slice of ham and more cheese.

Let it cook for a minute until other side is lightly brown. Fold the crepe in half.

Then fold again and you will get a Ham and Cheese Crepe in triangle shape.

You can also roll them instead of folding, whichever way you prefer. Now you got one crepe, repeat the steps to make a few more. They are small so I made 6 for the two of us today.

Serve warm with a cup of tea, coffee or for me, some mango juice to get my Sunday started.

Funny, now I remember we were actually eating Ham and Cheese Crepes from the street vendor while waiting in line to go up on the tower.

Ingredients
  • 1 cup all-purpose flour
  • 2 eggs
  • ½ cup milk
