Serves: 8-10
Ingredients
  • 3 cups whole roasted unsalted cashews
  • 2 cups whole walnuts halves
  • 2 cups whole pecans halves
  • ½ cup whole almonds
  • 2 tablespoons seed oil (like vegetable oil)
  • ⅓ cup pure maple syrup
  • ¼ cup light brown sugar
  • 2 tablespoons fresh orange juice
  • 1 teaspoon smoked paprika,
  • 1 teaspoon chili powder,
  • ½ teaspoon cayenne
  • 2 tablespoons minced fresh rosemary (or more if you love it strong!)
  • 4 teaspoons sea salt
Instructions
  1. Preheat your oven to 350°F (175°C) and brush a rimmed baking sheet generously with vegetable oil.
  2. Dump your nuts directly onto the sheet pan. Drizzle with the oil, maple syrup, brown sugar, and orange juice. Mix right on the pan until evenly coated.
  3. Sprinkle paprika, chili powder, cayenne, minced fresh rosemary, and 2 teaspoons of sea salt over the nuts. Toss again.
  4. Spread them out into a single flat layer. Roast for 25 minutes, stirring twice during baking so they glaze evenly and don't burn.
  5. Remove from the oven. While they are still piping hot, hit them with 2 teaspoons of salt. Let them cool completely on the pan, stirring occasionally so they don't stick together. Enjoy warm or store in an airtight jar!
