Ingredients
  • 12 medium carrots
  • 2 tablespoons olive oil
  • 1 tablespoon harissa paste
  • 2 tablespoons honey
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • fresh cilantro to garnish (optional)
Instructions
  1. Preheat the oven to 400ºF.
  2. Slice the carrots diagonally in 1 ½-inch-thick slices, they will shrink while cooking so make the slices big. You can also roast them whole if they are small.
  3. Mix all the spices, honey and olive oil in a bowl and taste. I used 1 tablespoon of harissa, use less if you don't like spicy food or more if you want more heat.
  4. Toss the carrots in the harissa honey sauce.
  5. Transfer to a sheet pan in 1 layer and roast in the oven for 20 minutes or until just tender. Garnish with some fresh cilantro leaves (optional). Serve over some rice as a side dish or on its own. Enjoy!
