Ingredients
  • ⅔ cup panko (Japanese dried bread crumbs)
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon grated lemon zest
  • 4 tablespoons olive oil (2 for panko, 2 for frying)
  • 6 small salmon fillets, skin on
  • 2 tablespoons Dijon mustard
  • lemon wedges, for serving
Instructions
  1. In a small bowl, mix together the panko, parsley, lemon zest, ½ teaspoon salt, ½ teaspoon pepper, olive oil and stir until the crumbs are evenly coated with the oil. Set aside.
  2. Place the salmon fillets, skin side down on a cutting board. Brush the top with Dijon mustard and sprinkle with salt and pepper.
  3. Press the panko mixture thickly on top. The mustard will help the panko stick to the fish.
  4. Heat the olive oil over medium heat in a large cast iron skillet or a large heavy oven proof pan. When the oil is hot, add the salmon fillets, skin side down and let them cook for 3-4 minutes to brown the skin.
  5. Transfer the pan to the preheated oven and bake for 5-7 minutes until the salmon is cooked and the panko is browned. Remove from the oven and allow to rest for 5-10 minutes. Serve with lemon wedges.
