MIXED GREEN SALAD WITH WHITE TRUFFLE OIL

Ingredients
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon of honey
  • salt and freshly ground black pepper
  • 6 tablespoons extra-virgin olive oil
  • 5 oz. mixed green salad
  • ¼ cup toasted sliced almonds
  • ⅓ cup dried cranberries
  • white truffle oil, for drizzling
  • ⅓ cup Parmesan cheese shavings
Instructions
  1. Whisk together the lemon juice, Dijon mustard, honey, some salt and pepper in a small bowl; slowly whisk in the olive oil.
  2. In a large bowl, add the mixed green salad, almonds, dried cranberries, salad dressing and toss gently. Transfer to a serving platter.
  3. Shave Parmesan cheese with a vegetable peeler. Scatter the Parmesan on top, drizzle with the truffle oil and serve.
