Ingredients
  • 2½ cup all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1¼ cup sugar
  • 2 teaspoons lavender buds
  • 1 stick (8 tablespoons) unsalted butter, room temperature
  • ¼ cup coconut oil
  • 1 large egg, room temperature
  • 1 cup white chocolate chips
Instructions
  1. Preheat the oven to 375 ºF.
  2. In a large bowl, combine flour, cornstarch, baking soda and salt. Set aside.
  3. Add sugar and lavender into a food processor. Process until they are combined, about 20 seconds on low.
  4. In the bowl of a stand mixer, mix together butter, coconut oil and lavender sugar with a paddle attachment. You can also use hand mixer if you don’t have a stand mixer. Mix until smooth.
  5. Add in an egg. Beat until combined and fluffy.
  6. While the mixer is running on low, slowly add in the flour mixture. Beat until just combined.
  7. Use a spatula to stir in the white chocolate chips.
  8. Scoop the dough into medium-sized balls. You can use a tablespoon ensure all of the cookies are uniform. Place them two inches apart on a baking sheet lined with parchment paper or silpat.
  9. Bake for 12-14 minutes.
  10. Allow to cool on baking sheet for 5 minutes. Transfer to cool on a wire rack. Serve with some tea, coffee or by themselves.
