ITALIAN SAUSAGE AND SUN-DRIED TOMATO PASTA

- 18 oz. pasta of your choice (Penne or Spaghetti)
- 4 links sweet (or spicy) Italian sausage, case removed
- 4 cloves minced garlic
- 1 chopped yellow onion
- 4 tablespoons chopped sun-dried tomatoes packed in olive oil
- ½ cup pasta water
- 2 tablespoons olive oil
- 1 tablespoon of the oil from the sun-dried tomato jar
- salt and pepper, to taste
- ¼ cup fresh grated parmesan cheese
- chopped parsley for garnish
- Cook pasta to al dente (slightly undercooked, about 1 minute less than the package's instructions), drain. Reserve ½ cup of pasta water.
- Heat up olive oil and the oil from the sun-dried tomato jar in a pan, medium heat.
- Add chopped onion and garlic, cook for a few minutes until the onion is translucent.
- Remove casing from the sausage links, break into pieces. Add to the pan, cook for 3-4 minutes.
- Add sun-dried tomato, a pinch of salt and a pinch of pepper.
- Add pasta and the reserved pasta water, toss everything together. Taste it, add more salt and pepper as needed.
- Turn of the heat. Sprinkle with grated Parmesan cheese and chopped parsley before serving.
