ITALIAN SAUSAGE POTATO HASH

Ingredients
  • 3 baby Yukon gold potatoes (or 1 Russet potato)
  • 2 links of sweet (or spicy) Italian sausage
  • 2 green onions, chopped
  • 3 cloves garlic, minced
  • 4 eggs
  • 1 teaspoon smoked paprika
  • 1 tablespoon Canola or vegetable oil
  • salt, pepper to taste and a handful for boiling potatoes
Instructions
  1. Scrub potatoes real good and boil them in salted water for 20-25 minutes until folk tender.
  2. Heat up vegetable oil (or canola oil) in a regular pan or cast iron pan, medium heat. Remove Italian sausages from casing and break into small pieces. Add them to the hot pan. Cook them until golden brown. Remove from the pan and move onto a plate.
  3. Add potatoes into the pan, cook until golden brown.
  4. Add sausages back into the pan and cook for a minute. Add chopped garlic. Season with salt, pepper, smoked paprika. Mix them together and cook for 30 seconds.
  5. Add chopped green onions. Mix everything together. Lower the heat to medium low.
  6. Crack in the eggs. Cover with a lid until the whites are set and cooked.
  7. Serve up the hash with fried eggs on top of each portion.
