GLASS NOODLES WITH BACON AND BOK CHOY

Ingredients
  • 8 oz. Glass Noodles (aka Cellophane noodles or Bean Vermicelli).
  • 10 chopped Bok Choy leaves
  • 4 slices of thick cut bacon, cut into small pieces
  • 3 tablespoons Golden Mountain Seasoning Sauce (or light soy sauce)
  • 2 tablespoon Oyster Sauce
  • 1 teaspoon spicy chili paste
  • 1 tablespoon sugar
  • 1 teaspoon Sesame Oil
  • 3-4 cloves of chopped garlic
Instructions
  1. Soak noodles in hot tap water for 20 minutes (do not boil it, otherwise, it will become too mushy at the end). Drain them in a colander.
  2. Mix soy and Oyster Sauce, chili paste, sugar and Sesame Oil in a small bowl.
  3. Cook the bacon in a large pan, medium heat until almost crispy.
  4. Remove bacon from the pan and place them on a plate. Discard most of the grease and keep about 1 tablespoon in the pan.
  5. Add chopped garlic to the pan with the remaining bacon grease and let cook for 1 minute.
  6. Add Bok Choy into the pan and stir 2-3 minutes.
  7. Add the noodles and bacon into the pan, stir for 1 minute.
  8. Add sauce mixture into the pan, stir for 2-3 minute. Turn off the heat. Serve hot.
Notes
You can substitute any leafy green such as spinach or kale if you don't have Bok Choy.
