BASIL BEEF WITH FRIED EGG

Ingredients
  • 12 oz. beef, sliced thinly against the grain
  • 5 cloves garlic
  • 4 Thai fresh chilies (optional or use less)
  • 2 teaspoons Golden Mountain Seasoning Sauce or light soy sauce
  • 1 teaspoon Dark Sweet Soy Sauce
  • 1 teaspoon Oyster Sauce
  • 2 teaspoons Fish Sauce
  • 1 teaspoon sugar
  • 1 teaspoon Chinese chili paste
  • 1 tablespoon water
  • 1 cup torn basil leaves
  • 4 eggs
  • 2 tablespoons vegetable or canola oil
Instructions
  1. Mix Golden Mountain Seasoning Sauce (or light soy sauce), sugar, Oyster Sauce, Dark Sweet Soy Sauce, Fish Sauce and Chinese chili paste in a small bowl.
  2. Chop garlic and chilies, then mix them together.
  3. Make fried eggs, heat up the oil in a medium pan on medium-low heat.
  4. Crack the eggs into the pan, cook until the whites are set and the yolks are still runny. Remove them from the pan and set aside.
  5. Crank up the heat to medium-high. No need to add more oil, there should be enough left from fried eggs in the pan.
  6. Add the garlic and chili mixture, stir for about 20 seconds.
  7. Add the beef, stir until it is cooked, 4-5 minutes.
  8. Add the sauce mixture. Stir-fry for another few seconds, then add 1 tablespoon of water and the basil until it’s just wilted.
  9. Turn the heat off. Serve with jasmine rice (or quinoa) and fried eggs.
