SPICY GARLIC SHRIMP PASTA

Ingredients
  • 24 medium shrimp, peeled and deveined
  • 10 garlic cloves, thinly sliced
  • 3 garlic cloves, minced
  • 10 oz. pasta of your choice (spaghetti, penne, etc.)
  • 1-2 Thai fresh chillies, chopped
  • 5-10 dried whole chillies
  • ½ teaspoon cayenne pepper, plus more to sprinkle on top
  • 2 tablespoons olive oil
  • salt
  • black pepper
  • basil or parsley to garnish (optional)
Instructions
  1. Cook pasta according to the package. Drain it, set aside.
  2. Fry garlic slices and dried chillies in olive oil, low heat until the garlic is golden brown and crispy. Be careful not to burn them.
  3. Take them out of the pan into a small plate. They will be used to top off your pasta at the end.
  4. Cook minced garlic and Thai fresh chillies in the same pan for a minute, medium heat.
  5. Add the shrimp, salt, black pepper and cayenne pepper.
  6. Cook the shrimp until they turn pink. Don't over cook, they will get tough.
  7. Add the pasta. Toss everything together really quick. Taste to see if it needs more salt, pepper or cayenne pepper.
  8. Top with some garlic chips and dried chillies before serving. Sprinkle more cayenne pepper and garnish with whole basil leaves or parsley (optional).
