Ingredients
  • 2½ lbs. yellow onions, halved and sliced ¼ inch thick (8 cups)
  • 1 stick (1/4 lb.) unsalted butter
  • 1 bay leaf
  • ½ cup brandy
  • 1½ dry white wine
  • 8 cups beef broth

  3. Add white wine and simmer for 15 more minutes.
  4. Add beef broth. Add salt and pepper and bring it to a boil, then simmer uncovered for 20 minutes.
  5. Remove the bay leaf, taste to see if it needs more salt and pepper. Serve hot with crispy Parmesan Croutons.
