MANGO TRIFLE

Serves: 4 individual cups
- ½ pound cake, cubed
- 2 cups of mango, cubed
- 2 cups (1/2 quart) heavy whipping cream
- 2 teaspoons sugar
- ½ teaspoon vanilla extract
- honey
- coconut chips
- In a mixing bowl, whip cream with sugar and vanilla to soft peaks.
- To assemble the trifle, spoon a layer of the whipped cream into a glass or a large glass bowl.
- Add a layer of pound cake.
- Then fresh mango. Drizzle with some honey.
- Keep going to make 3 or 4 more layers, depending on the size of the glass.
- Finish with a few pieces of mango and crunchy sweet coconut chips. Cover with plastic wrap and refrigerate until ready to serve.
