Line the raisin nut bread slices on a baking sheet. Brush both sides with olive oil.
Then sprinkle both sides evenly with some sugar, gently rubbing it in.
Put the baking sheet in the oven, toast under the broiler for about 2 minutes. Flip the bread and toast the other side for another 2 minutes or until golden brown. Remove the baking sheet from the oven and let the bread cool.
In a medium bowl, mix together the ricotta, vanilla and 1 tablespoon of sugar with a rubber spatula.
Divide the mixture and spread it evenly on each piece of toast.
Top with berries, drizzle with honey and sprinkle with a little sea salt. Enjoy!
Notes
You can also cook the bread in a skillet instead of in the oven.
