OVEN OMELET

- 8 eggs
- 1 cup milk
- ½ teaspoon seasoned salt
- 2 cups frozen shredded hash brown potatoes
- 1 cup diced fully cooked ham
- 1 cup (4 oz.) shredded sharp cheddar cheese
- ½ cup diced yellow onion
- ½ cup red bell pepper
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl, beat the eggs, milk and seasoned salt together.
- Stir the remaining ingredients into the egg mixture. Save some cheese to sprinkle on the top.
- Pour into a greased 8-inch square baking dish. Sprinkle the remaining cheese on the top.
- Bake for 45-50 minutes or until a knife inserted near the center comes out clean. Garnish with some parsley leaves (optional). Enjoy!
Instead of ham, you can also use sausages or bacon (or all!). For veggies, you can try spinach or maybe asparagus if you feel adventurous. Go for it!
