  • 8 extra large eggs
  • 2 cups of Nutella
  1. Preheat the oven to 350 F.
  2. Grease a 9" springform pan with some cooking spray, then line the bottom and the sides with parchment paper.
  3. Crack the eggs into the mixing bowl of a stand mixer. Beat them with the whisk attachment. Use medium speed for 2 minutes and high for 8 minutes until the eggs triple the volume.
  4. Lower the speed to low and add 2 cups of Nutella little by little until incorporated. The volume of the eggs will go down but don't worry, that's how it's supposed to be.
  5. Pour the batter into the prepared springform pan. Bake for 30-35 minutes. Insert a knife in the middle at 30 minutes and if it comes out clean, it's done. Do not over bake!
  6. Let the cake cool completely before removing the springform pan and parchment paper. Sprinkle the top with confectioner sugar. Garnish with some raspberries or strawberries.
If your Nutella is hard, you can microwave it for 20-25 seconds to soften it.
If you use a hand mixer, it will take a little longer to beat the egg, when the volume triple up, fold in Nutella little by little until incorporated.
