NUTELLA AND BANANA CREPES

Ingredients
  • 1 cup all-purpose flour
  • 2 eggs
  • ½ cup milk
  • ½ cup water
  • 2 tablespoons butter, melted
  • 2 tablespoons sugar
  • 1 teaspoon pure vanilla extract
  • a pinch of salt
  • Nutella
  • 3-4 bananas, sliced
  • Powder sugar for garnishing
Instructions
  1. In a large mixing bowl, mix together flour, salt and sugar. Add the eggs and whisk everything together.
  2. Gradually add in the milk and water (I mixed them in a measuring cup), stirring to combine.
  3. Add melted butter.Add pure vanilla extract, whisk until smooth. The batter will be runny, like thin pancake batter.
  4. Heat the crepe pan or non-stick frying pan over medium heat. Pour or scoop the batter onto the pan, using approximately ½ cup for each crepe.
  5. Tilt the pan with a circular motion so that the batter coats the surface evenly. Don't worry about it being perfectly round, it will still taste good either way.
  6. Cook the crepe for about 3 minutes, until the bottom is lightly brown. Loosen with a spatula, turn and let the other side cook until the edge and bottom are lightly brown.
  7. Transfer the crepe to a plate. Make a few more. Once you have finished making all the crepes, assemble by spreading Nutella thinly on each crepe. Lay sliced bananas on one half of the crepe. Save a few for garnishing. Fold the crepe in half then fold again and you will get a Nutella and Banana Crepe in a triangle shape.
  8. Garnish with a few sliced bananas and dust powder sugar on top using a strainer (optional). Serve with a cup of coffee, tea or juice.
Notes
If you have left over batter, you can keep it in the fridge for 48 hours.
